Onion Jam


4 onions thinly sliced

2 tablespoon Brown sugar

1/4 tsp salt or to taste

3 tablespoons balsamic vinegar

2 tablespoon extra virgin olive oil or butter


in a saucepan heat olive oil and add onions. Sautee till translucent. Now add the brown sugar and cook for about 15 minutes. When the onions have a sweet fragrance and are brown, soft, wilted and cooked down to about 50% of the original volume add the balsamic and cook it down a little more. Store in the refrigerator.
