Herb de Provence Chicken


1 whole chicken with the skin

1/2 cup melted butter

2 teaspoons herb de Provence

8 cloves of crushed garlic

2 tablespoons mustard

1 teaspoon umami powder

Juice of 1 lemon

2 teaspoons Balsamic Vinegar

Salt and pepper to taste

veggies of your choice (I used potatoes, carrots & sweet peppers)


Mix all the above ingredients except for the veggies and rub on the chicken, under the skin and in the cavity. Spread the veggies around the chicken. Drizzle everything with olive oil. Cover with foil and bake till almost done. For last 15 minutes take off the foil and let it cook. Don’t forget to tag me in your remakes.
