Greek Mavromatika (Black Eyed Peas) Salad

This salad is super easy and nutrient dense.

4 cups cooked black-eyed peas

A small onion chopped in small pieces

juice of 3 small lemons

1/2 tsp apple cider vinegar

EVOO I use 1/4 to 1/2 cup

salt & black pepper to taste

dill 1/4 cup minced

Oregano and mint to taste.

Mix all the ingredients together and toss gently. Drizzle with some olive oil before serving.. I make it at least once a week and the kids like to take it to school for lunch the next day.
