Fatoush (Lebanese salad)

Ingredients:


Whatever veggies you prefer. I use the basics and add whatever I have on hand.

1 bunch parsley

diced English cucumbers

diced tomatoes

romaine lettuce


Dressing

1/3 cup EVOO

juice of 2-3 lemons

4-6 garlic cloves minced

2 tbsp sumac

lemon zest of 2 lemons

3 teaspoon pomegranate molasses

2 teaspoon mint fresh or dried

salt to taste

black pepper to taste


Method:


In a pan heat up some EVOO, then add the cut up pita, salt,

black pepper and toss it well. When the pita is nicely toasted remove and set aside


Put all the dressing ingredients into the nutribullet and pulse. Throw your veggies into your salad bowl. Top with toasted pita. Pour dressing over your salad and enjoy
