Bun Kabab Karachi Street Food Style




Ingredients for Kabab:


1 cup chana daal

2-3 potatoes peeled and cut

2 teaspoons cumin seeds

4-5 dried chilies

6 cloves of garlic

Salt to taste

1/2 teaspoon Garam masala

Chaat masala to taste

1 onion chopped

1/2 teaspoon ginger paste


Method:


Soak the chana daal in water for a few hours. Now wash and boil your daal with your potatoes. And add all the above ingredients. Don’t add too much water. You want there to be a little bite to it as opposed to being mushy. Once it’s ready take it off the stove and using a potato masher mash up all the ingredients to a textured paste. Set aside and let it cool. Once it’s cooled make small patties and pan fry it: I used a tawa ( a flat pan girdle without grooves) Add a little ghee to help it not stick and cook it for a few minutes till it has a little char to it. Set aside




Ingredients for green chutney

1 bunch cilantro

I bunch mint

1-2 jalapeños depending on how spicy you like it

1 clove of garlic

Salt to taste


Method:

In your blender mix all the above ingredients. Taste it to make sure it’s right and adjust accordingly. When ideal set aside



Ingredients for imli chutney:


10-12 pcs Dried imly (tamarind)

Salt to taste

1 teaspoon Brown sugar or to taste

Salt to taste

1/2 teaspoon Red chili powder or to taste

Chaat masala to taste

1 teaspoon roasted cumin seeds crushed


Method:


Soak your tamarind in water for a few hours then squeeze out all the pulp and strain. Add all the above ingredients and mix well. Set aside


Method for constructing Kabab:


Now in the same griddle where you made the daal potato Kababs heat some more ghee and toast your buns. Put the green chutney first then add the patty then some more green chutney and some sliced onion. Now add the imly chutney then add some more green chutney to the top bun and cover.
