Bombay Bakery Coffee Cake

Bombay Bakery Coffee Cake is iconic in Pakistan. People literally line up for hours to get their hands on some. It's truly that good! You can't imagine my thrill when I finally perfected this recipe. For the Cake:

1 stick of butter or 1/2 cup of butter

1 cup sugar

2 eggs

1.5 cups flour

Pinch of salt

2 teaspoons baking powder

3/4 cup warm milk

1 teaspoon vanilla

For the icing:

1.5 cups icing sugar

1 tablespoon butter

2 tablespoons milk

1 teaspoon instant coffee

Method For The Cake:

Preheat your oven to 350

Beat the butter and sugar till creamy. Then add the eggs and beat till incorporated. Now add all the dry ingredients. Mix well and add the milk and vanilla. Pour into a prepared pan and bake till done. It takes approximately 20 minutes but please keep an eye on your cake as each oven is different.

Method For The Icing:

In a saucepan heat your butter and add the sugar. Dissolve the instant coffee completely then pour it into the saucepan and whisk till smooth. Pour the icing on the cake as soon as you take it off the stove. Enjoy
