Asian style Salmon with Mixed Veggies over Buttered Orzo

Asian Wild Sockeye Salmon with Vegetables and Buttered Orzo

Ingredients:

6 pieces Sockeye Salmon #costco

For the marinade:

10 pods of garlic

3 tsp ginger crushed

4 tbsp soy sauce

1-2 tsp Siracha or to taste

Juice of 1 lemon

1 bunch coriander

1 tsp red pepper flakes

2 tsp honey

2 tbsp Extra Virgin Olive Oil

1 lemon thinly sliced

1 cup orzo

1 red pepper cubed

1 green pepper cubed

1 eggplant cubed

1 onion sliced

Salt and pepper to taste

Method:

In a nutri bullet blend all the marinade ingredients and set aside. In a cast iron skillet heat oil and add the salmon fillets skin side down. Sprinkle with salt. Cook about 5-7 minutes. Set them In an oven safe dish and cover with foil. Pour the marinade over it. Cover and bake for about 15 minutes. Now uncover add lemon slices and bake for another 5 minutes. Now set your over to broil and bake till the skin is crispy.

In the cast iron skillet you used to cook the salmon add more oil and throw in all the veggies and garlic pods. Salt and pepper to taste. Cook till done. Now boil your orzo. Drain when cooked and add some salt and butter. Now layer your plate. First add the orzo and top with veggies and add your salmon next to it. Drizzle with any left over marinade.
